This is a straight-edged Castella knife with a blade length of 30.5cm. The blade is incredibly thin and flexible, making it ideal for precise slicing of delicate pastries like Castella.

Made from stainless steel, this pastry knife is easy to maintain and is an excellent tool for professional pâtissiers.

The knife has been sharpened, so it cuts well and is ready to use immediately. Please handle it with care when unpacking. The price includes the sharpening fee.
