Organic slaat dus zowel op de whisky als op de oloroso sherry. De eerste rijping vond plaats op bourbonvaten. Na veertien jaar werd de whisky overgestoken op oloroso sherryvaten. Deze vaten waren afkomstig van Bodegas Robles, een sherryhuis dat al zijn wijnen volledig biologisch produceert. De finish duurde twee jaar. In 2019 zijn er 528

Smaak:
tonen van gedroogd fruit, honing, rijk eikenhout, zoete mout, subtiel citrusfruit, specerijen en hints van toffee en chocolade.
Afdronk:
vooral tonen van gedroogd fruit en honing.
